Taco Soup

I love to try new recipes on Saturdays, especially when it's cold out.  Today I'm trying Taco Soup.  SOOOO EASY....It may be a weight watchers recipe because it says 1 cup = 2 points under the name.  I found a copy of it folded in one of my sister's cookbooks.

Taco Soup

1 lb. ground lean beef or turkey
1 large onion
1 pk taco seasoning
1 pk Hidden Valley Ranch dressing mix
1 can pinto beans w/ juice
1 can whole corn w/ juice
1 can rotel
1 can diced tomatoes
1 can tomato sauce
1 can black beans w/ juice
1 can kidney beans
1 can water

Brown meat and onions, drain.  Mix Hidden Valley Ranch dressing mix and taco seasoning mix into meat.  Then without draining the liquids, add all of the other ingredients.  Simmer 1 hour.




I added the mexican shredded cheese and sour cream.  It was yummy.


My December and January copies of Southern Living arrived today, now excuse me while I stuff myself and enjoy my favorite magazine.

Taco soup has been one of our staples for years. We love it. Instead of using black beans and kidney beans, I use Ranch Style beans. Mmmmm!!

Oh how I love taco soup! I wanted it so badly this weekend that I borrowed the corn and taco seasoning from my neighbor (we do that lots). I only used half of the ingredients and it was still sooooo good and warm. Cheers to taco soup lovers everywhere!

K and I love that, but Troy can't stand it so I have to make it when he is working nights...same with the Chicken Chili. You should try it with BS chicken breast to....so good!
